Here is a very helpful resource that I found. It can take any text, video, etc. and generate student resources for it, including vocab lists, multiple-choice questions,  and even short answer questions!  You can also differentiate the text levels and questions for different levels of readers. There is a free version that does just about everything, but when you create your account, you get a free trial of the complete version.
